Thank you for your invitation. This time, I am very lucky to be able to participate in the Kyushu-themed private kitchen day specially prepared by Sake Bar Zhixinliao.
This is not just a simple wine pairing dinner party, but an evening completely designed with Kyushu terroir as the core.

Kyushu is one of the regions of Japan that I personally like very much. The store specifically explained that the theme of this time is the "Samurai style" cooking culture. The proportion of meat is high, the seasoning is direct, and the wine is heroic but not rough.

Hakata Boiled Chicken × Nagasaki Octopus Crispy Noodles

The opening is two contrasting hot and cold appetizers: the chicken of the boiled chicken is extremely soft, with a touch of green plum to bring out the refreshing acidity; Nagasaki octopus is eaten with crispy noodles, the taste is elastic, crispy, and very pleasing.

Saga| Nabeshima Special Brew

This cup of Nabeshima is an excellent starting style.
The rice fragrance is clean and the acidity is neat. It matches the sweetness of the boiled chicken and the seafood of the octopus just right, allowing the taste buds to enter the rhythm in an instant.

Kitakyushu snapper flax tofu Bowl

A bowl of extremely comfortable soup.
In addition to snapper, there are also sesame tofu and mushrooms. The soup is thick but not greasy, with the warm outline unique to Kyushu cuisine.

Kumamoto Shochu|Fiber Moon Barrel Aged

The match for this bowl of soup is the barrel-aged version of fiber moon.
The aromas of oak and grain make the wine rounder, which is very in tune with the sesame flavor of sesame tofu.

Hakata Bacon Miso

This dish tastes almost like roast meat, salty and direct, and is a typical Kyushu-style appetizer.

Saga| Nabeshima Special Junmai

The thickness of pure rice makes this meat flavor more three-dimensional, and the wine and fat form a very comfortable balance.

Hizen Ronan Chicken Teriyaki

This performance is relatively well-behaved and exists as a transition in midfield.

Saga|Cracked Wheat Shochu

The cracked clean wheat fragrance resets the taste and prepares for the next round of stronger flavors.

Satsamayan × Takana Mentaiko Fried Rice

Satsamayan is a classic of Kagoshima, similar to fried oden fish paste;
The fried rice paired with Takanai and Mentaiko is layered with salty flavor. It is a typical Kyushu heroic flavor. It is very shabu-shabu with the store's homemade hot sauce.

Miyazaki|EMO T (Blended Wine)

This cup was a little surprise that night.
It has a pronounced earl Grey tea aroma, elegant but not sweet and greasy.

Kumamoto Red Beef Grilled

The lean meat ratio and mineral feeling of red beef itself make it particularly clean in a series of thick dishes.

Kumamoto|Soil-grown two-year-old agricultural brew

One that I personally like very much.
The transparency of the soil and the meaty aroma of red beef echo each other, making it one of the most comfortable pairing tonight.

Moji Port Banana Paste Nut Cup

Ending with banana ice cream and banana puree, it is very sweet and gentle.

Kagoshima|Natural Talent Junmai Ginjo

The fruity fragrance is clean and the finish is refreshing, which draws a beautiful end to the night.

This one is the most amazing product in the audience.
The skin is crispy, the filling is spicy and sweet, and it is completely the level that you would like to order another one.

This time, the meal friend also opened two bottles.:
•New Deal 2020 Heresy Ancestors Co., Ltd. (Another bottle of new Deal has been accumulated)
• New Deal linen cat

Both bottles are series that I like very much. To be able to drink them on such a night is completely bonus-level happiness.

Final Thoughts

This night in Zhixinliao, it really seemed like being taken to Kyushu for a trip.
Not with scenery, but with wine and food, to completely reproduce the "heroic, gentle, and samurai temperament".
If you like to use terroir to understand sake and cuisine, Zhixinliao's themed private kitchen night is well worth chasing.

It is actually a good attempt to make a meal and wine pairing in the form of a sake bar.
Although the completion of the cuisine may not be as meticulous as that of an orthodox izakaya, it can be achieved "every dish has a corresponding glass of sake", and it is still designed around a clear theme. Such intentions and ambition are very worthy of affirmation and encouragement in themselves.
