Located downstairs in the Jinghua Hotel, "fumée" is a reservation restaurant famous for its charcoal-burning birds. The restaurant has a beautiful environment, comfortable overall space, and a large number of service staff. It can be seen that a lot of costs have been invested in its operation. But after actual experience, I think this shop may not be my dish.

fumée Yakitori|June Menu

🔸Tofu soup
Made with Burrata cheese and chicken stock, it has a dense taste similar to tofu, which is an interesting opening.

🔸Chicken neck meat
The crisp taste is satisfactory, and the heat is well controlled. It is one of the items with a better impression in the previous paragraph.

🔸Chicken breast + mustard
Well-behaved, without too many memory points.

🔸Soft-boiled quail eggs
This is one of the highlights of the whole show! The soy sauce is pickled and delicious, the egg yolk is soft, rich and smooth, and it is very delicious.

🔸Chicken fillet Kimchi Roll
Presented in Korean-style roast meat, the chicken is covered with carbon grilled kimchi, plus shredded ginger and yellow leek. The concept is good but the taste is slightly dull.

🔸Chicken drumsticks with scallion skewers
Using Chiayi sweet scallions, the skin is crispy and the meat is tender, which is delicious, but it is still slightly inferior to Birdy.

🔸Bamboo tempura
The performance is stable and delicious.

🔸Mountain Litsea Chicken gizzards
The roast is very crispy, the chicken is big enough, and the aroma of Mountain Litsea also enters the meat. It is my favorite style, which is better than Birdy's.

🔸Chicken Nuggets Sandwich
Combining chicken drumsticks with cartilage, with honey mustard and pickled cucumber, it tastes like a Japanese fried sandwich. It is a sincere design.

🔸Chicken Liver Monaka Cake
Mascarpone cheese is combined with guava and dried cranberries, plus Basamik vinegar, which blends sweetness and saltiness. It is a creative little spot.

🔸Roasted lotus root
Well-behaved, delicious but not special.

🔸 Cage boiled and roasted
One of the specialties of fumée, the wok is full of gas, but the whole is too greasy, and it will be a little greasy after eating.

🔸Chicken wings
The use of French white oak barbecue, the aroma is enough, but the taste is more ordinary.

🔸Sesame oil chicken heart
I was sent up before I finished the previous one, and the experience was not good. This kind of pace of dishing makes people eat a bit hastily.

🔸Hand-made chicken meatballs with mountain pepper
It's a pity that no cartilage was added, and no egg yolk was added, so the expectation fell through.

🔸Chicken gizzards edge side
This dish is more delicious than Birdy's version, and the heat is well controlled.

🔸Chicken diaphragm
The meat is salty and the performance is ordinary.

🔸Chicken soup
The taste is rich, and it is a big plus to be able to renew the bowl.

🔸Curry rice
Add black sesame seeds to add aroma, special taste, unexpectedly delicious.

🔸Yogurt ice cream
The whole is more perfunctory, and the ending as an after-dinner meal is a bit dull.

Japanese sake pairing

The matching five glasses of sake are all safe choices. The performance is safe but not particularly outstanding. There are no impressive wines.

Overall dining experience and personal feelings

It is a pity that the overall experience did not reach the level of "booking a difficult store". For example, I was not asked if I wanted to add some ham, the service staff introduced the meal in different ways, and even there would be waiting while waiting for some more. In addition, there were fruit flies flying around the seats that day. These details all affected the overall dining experience.

Overall,fumée It's not bad, but when the expectations are high, the actual experience is slightly disappointing. Some items such as chicken gizzards, chicken liver monaka cakes and curry rice performed well, but the overall rhythm, service and meal highlights are still not concentrated enough, and the price and performance are not quite equal.

Choosy Chou

Hi, this is Chou Chou. Because I have always been "picky" about good things, I founded Choosy Chou to record and share the food, flavors and travel experiences that are truly worthy of being remembered. I am a food and flavor explorer, from street food to Michelin restaurants, from hidden bars to boutique cafes, I like to use my professional senses to taste, understand and compare, rather than just taking pictures and checking in. I have WSET Wine Level 2, WSET Sake Level 1, SSI Sake Navigator, and Coffee CSP Sensory Skill Foundation licenses. I hope to use a more systematic way to show you the flavor value behind a glass of wine and a dish. I have traveled to many countries such as the United States, Japan, South Korea, Iceland, and the United Kingdom.
