This "Daigo" was recommended by Xiao Mou's book. Originally, I just held the mentality of trying it out, but I didn't expect it to end up as a trip with 8 glasses of sake in one night.

We came here after the roast meat was finished in the previous article, so this stop is purely drinking and not eating. Although it is nominally an izakaya, it is actually more like a "small bar with a very high density of wine", and the degree of wine hiding really makes the eyes of people who know how to drink shine.

There are many types of sake in the store, but not all of them are written on the menu.,
For some wines, you must look at the "treasure hunt" of the wine cabinet from a distance, see the label from the gap, and then ask the clerk.
Those who can be named and those who can't are mixed together, like a private collection being opened for people to turn over slowly.

If you have a certain familiarity with sake yourself, it will be very fun here.

Daigo menu introduction and Dining experience

14th Generation Longquan Falcon

This cup can be said to be the highlight of the whole night.

"Ryusen Hayabusa" is one of the top wines of the 14th generation. The brewing specifications are comparable to Ryusen, but it is the 30th anniversary version of President Takagi. It is specially blended into a thin turbid body.

The current market price is about 68,000~87,000 Taiwan dollars,
There is really no regret in being able to drink a single glass in an izakaya.

The wine is delicate and silky, with a beautiful balance between sweetness and bitterness, with Longquan's consistent elegance and depth.

14th Generation Dragon Moon

In the 14th generation, the high-end wines of "seven drape and twenty guan" are used, which belong to the sub-high-end series.

This one is actually one of the wines I rated as Tier 1 last year, but this time it feels more ordinary to drink.
I'm not sure if it's because of the preservation condition (some people in the Google comments also mentioned that the wine is unstable), or if I drank the raw wine version before, but not this time.

The market price is close to NT台40,000, and the performance is not bad, but it is not as amazing as expected.

New Deal Lu Yu 132 2024

Now it's getting harder and harder to meet the Colors series that you haven't drunk yet.,
I found this bottle in the corner of the wine cabinet.

The fun of the Colors series lies in "using different wine and rice to present different style differences". Lu Yu No. 132 has a meticulous personality and stable performance.
The current market price is about NT币4,500.

IMG 9983

New Deal No. 6 X-type

No. I have drunk almost all of the 6 series (X/S /R), and I have once again verified one sentence: You really have a reason for it.

The structure and completion of X-type are obviously one level higher, but I haven't used the H-type, A-type or Xmas versions yet, so I can only leave it for the future to make up for it. The market price is about NT 台 7,000

The New Deal 2025 Special Promulgation Meeting "Garuda"

Brewed using the rare "rhizomycosis" yeast, the sake rice is Sakomachi, which is a very special experimental work.

This wine is hidden deep in the wine cabinet, and almost all of it is currently "sold out" on the Internet. It's good luck to be able to drink it here.

The flavor route is quite unique. It is indeed not an everyday sake, but it is more inclined to collection and experience.

IMG 9992

Sanxiao Le Shan Waste Junmai Yamada Nishiki

Now that you are in Kanazawa, try the wine of Toyama Prefecture.

The style of the mountain waste system is obvious, but it is not my preferred type as a whole. I personally think it is slightly heavier.

IMG 9993

Katsukoma Junmai Daiginjo

Also from Toyama, it uses Yamada Nishiki and Kanazawa yeast.
The whole is clean, but the style is still not to my taste, and the performance is well-behaved.

IMG 9995

New Deal Pink Unicorn 2022

The hidden version of the new Deal's works belongs to the expensive brewing system, and it is almost impossible to buy on the market at present.

This is the second time I have drunk it. To be honest, this experience was not as amazing as the first time. It may be due to a different state or state of mind, but it is still a rare wine.

Final Thoughts

If you are "here for sake", then this shop is well worth a visit.

✔ Can drink many rare wines
✔ The price is more reasonable than Taiwan
✔ Extremely deep wine list
✔ Suitable for people who know wine and can pick their own wine

But to be honest, English communication is not smooth, and the menu is incomplete. If you don't understand Japanese or sake, the experience will be discounted.

If you can communicate in a little Japanese, or you are used to "looking at the wine cabinet to choose wine", it will be very fun here; if you are looking forward to service orientation, a complete introduction, or a meal experience, you may feel a distance.

Choosy Chou

Hi, this is Chou Chou. Because I have always been "picky" about good things, I founded Choosy Chou to record and share the food, flavors and travel experiences that are truly worthy of being remembered. I am a food and flavor explorer, from street food to Michelin restaurants, from hidden bars to boutique cafes, I like to use my professional senses to taste, understand and compare, rather than just taking pictures and checking in. I have WSET Wine Level 2, WSET Sake Level 1, SSI Sake Navigator, and Coffee CSP Sensory Skill Foundation licenses. I hope to use a more systematic way to show you the flavor value behind a glass of wine and a dish. I have traveled to many countries such as the United States, Japan, South Korea, Iceland, and the United Kingdom. I believe that the most authentic language in the world is hidden on the table and in the cup. Choosy is not picky, but an insistence on the quality of life. You are welcome to join me in savoring the world with higher standards.
