Before coming to Kanazawa, I had actually done my homework on several well-known stores. Names such as Katakami, Otome, and Muyanggu were almost standard on the list, but they couldn't be ordered at all, so I turned to searching for small shops that didn't have many reviews but had good reviews on Google, and finally chose this one.Between "Sushi Asanokawa"

When I arrived a little earlier than the appointment time, the store was empty for a while. To be honest, I was a little uneasy; but as the time approached, all the Japanese guests came in one after another. At that moment, I breathed a sigh of relief: This is not sightseeing sushi, but a small shop that operates quietly and relies on regular customers to support it.

A sushi restaurant "Sushi Asahikawa" located near Higashi Chaya Street. Run by the owner who studied at the famous sushi restaurant "Komatsu Yasuke" in Kanazawa, you can taste the craftsmanship of a skilled sushi chef.

There are only 6 front seats in the store, and the space is not large, but it can be closer to the rhythm of the master. Although the language is not completely interlinked, through simple English and physical communication, coupled with the performance of the food itself, the atmosphere of the whole meal was unexpectedly relaxed and pleasant.

The opening is a small bowl with a multi-element combination, including seaweed, vegetables, pickles and fish.

Xunwei Comprehensive Appetizer Platter

Tamako yaki, moray eel, duck dishes, Japanese-style "Bulgogi" yaki, shrimp, sardine rolls, cheese cheese, etc., are very hearty appetizers. Among them, the textbook-level sardine rolls are impressive.

Sashimi

I don't know what kind of fish it is, but it is paired with a special sake sauce.

Grilled fish

The combination of grilled fish with mountain pepper, miso and nuts is very layered, the aroma is warm and three-dimensional, and it will not take away the flavor of the fish itself.

Baked abalone and eggplant

This performance is quite outstanding. The abalone is soft and tender, the eggplant is full of aroma after absorbing miso and grease, and the upper layer is slightly coked. It is a comfortable and memorable hot dish.

Nigiri Sushi Paragraph

From here, you can enter the main axis of sushi, and you can also feel the characteristics of this restaurant: each has a different seasoning and processing method, not just relying on the fish itself.

Classic performance, beautiful acidity and clean taste, is a high standard of overall quality.

The taste is crisp and elastic, the handling is clean, and the matching method is simple, retaining the original flavor of the ingredients.

Sweet shrimp

The sweetness is natural and the texture is delicate.

Bamboo mackerel (Aji)

It is kneaded into a puree with scallions and ginger to enhance the fragrance without grabbing the flavor. It is a very standard and durable product.

Tuna belly

It is rich in grease but not greasy. The thickness of the cut is moderate, and it melts cleanly after being imported.

Black throat (Nodoguro)

Kanazawa's must-eat seafood is flavored with freshly ground rock salt and has a bright oily aroma. It is quite an eye-catching dish in the whole set.

Salmon eggs

The sour flavor of lemon peel embellishes the whole to make it more refreshing and there will be no greasy mouth problem.

Crab meat and sea urchin roll

The ratio of the two is well controlled, and the sweetness blends without grabbing each other, which is a very pleasing product.

As a turning point before the end, I am already very satisfied to eat here.

Brown sugar kudzu cut

The taste is smooth and the sweetness is restrained. It is a reassuring ending in the Japanese set meal. It is not a drama, but it is complete.

Suitable for wine pairing

This meal is matched:
Sake: Yoshida Zangu
Chablis recommended by the chef (it is very suitable for sushi)

Final Thoughts

A Kanazawa sushi restaurant worth saving for a night

"Sushi Asanokawa" is not the kind of famous restaurant that is amazing and topical when you eat it, but it has a sense of stability that makes people "eat very comfortably".

The rhythm of cooking is natural, the seasoning is changeable but not pompous; the distance in front of the board is close, and the rhythm and concentration of the staff can be felt; almost all the visitors are Japanese, which also makes the overall atmosphere quieter and purer.

If you, like me, like to explore this kind of unassuming but very real shop while traveling, then this one deserves to be included in Kanazawa's list.
