Tainan, a city known all over Taiwan for its snacks, has quietly nurtured a number of very different food landscapes in recent years. Between the temple and the old house, there is a restaurant that has almost become a taboo topic in the local food circle-not because it is difficult to eat, on the contrary, it is because it is difficult to order, so that Tainan people can't eat it by themselves. This restaurant is Ristorante MO.

Regarding MO, there are various theories circulating: private chefs, reservation legends, the strongest Italian cuisine in Tainan, and even one of the most anticipated fine dining in Taiwan. These labels can't help but sound exaggerated before they have been experienced firsthand. But when that wooden door really opens for you, when you step on that small stone road and sit down in the space of white beige wood, you will begin to understand why this restaurant makes people willing to wait.

This time I visited because the meal friends held a "New Deal One meeting" in MO-thank you to the great God for leading the way, so that I, a Tainan native, finally ate a restaurant that Tainan people couldn't book by themselves.

Introduction to Ristorante MO and Dining experience

Low-key entrance, a sense of ceremony in a two-way space

The appearance of MO is extremely low-key, and the restaurant sign is hung on the left side of the wooden door. If you don't take a closer look, you can almost miss it. Pushing open the wooden door, what you enter is not a dining space, but a reception room with sofas, allowing guests to sit and talk to each other first, so that the body and mind can slowly settle down from the rhythm of the city. Then pass through a short path paved with small stones before entering the real dining building-a two-story white space. That night, the lower level received 8 people and the upper level 12 people. The whole was composed of white, beige and wood. It was quiet and gentle, but with just the right sense of refinement.

This kind of binary space design is a kind of ritual in itself. It makes you clearly feel that what happens next is something to look forward to.

Theme of the season: Harmony in Conflict Contrasto in Armonia

This season, with the theme of "Harmony in Conflict", the chef combined ingredients that seemed contradictory at first glance, allowing them to find unexpected resonance on the plate. This proposition is not only the core of the menu, but also almost the reading framework for the whole meal-when you taste every dish, you can't help but think: Why are these ingredients put together? Why is it so reasonable?

Fresh and soft-four welcome dots with sardines as the main axis

Most people's memory of sardines is about the fishy smell of canned food, but the chef obviously intends to subvert this stereotype. MO launched a complete interpretation of sardines with four welcome dots, each presented in a different way, but always maintaining a sense of freshness.

Vinegar stains

The first course is treated with vinegar stains, and the original flavor of the sardines is clear. The bottom is based on the classic Italian tortilla (polenta), which brings out the local roots.

Charcoal grilled

The second charcoal roast, with cheese, nuts and crumbled bread, the bottom layer of butter fried bread crust makes the overall flavor fuller

FriedWith mud

The third course is wrapped in perilla leaves and fried, with a translucent sauce of lemon next to it, and a purple-black finished product that changes from acidic to alkaline after fermentation with fresh green lemons, which has the effect of astringent taste.

The fourth course is to beat the sardines into silky mud, with coked onions, and place the onions slowly roasted for six hours at the top. The sweetness is rich and three-dimensional in one bite.

From the most original flavor to the most exquisite details, the degree of care in this set of opening dots has been clearly stated: the chef has a high degree of fineness.

Fermentation and roundness-two appetizers

Cannibal salmon

The first appetizer, "Food without knowing salmon", takes salmon as the core. The season is selected before spawning, and the meat is the most delicate.

The top layer is thin-cut rhubarb, which is sour in itself, but it is marinated with a pink sauce to provide precise acidity without getting out of control; the bottom layer is a combination of yam and onion, yam is responsible for the texture, onion is responsible for the sweetness; the middle is topped with green tarragon oil sauce, the flowers bring honey aroma, Sicilian olive oilProvide herbal heritage.

The overall vision is as beautiful as a dessert, but the flavor is irreplaceable at the sour and fresh level. It is the first part of this meal that I remember most deeply.

White asparagus

The second white asparagus, its natural bitterness is eased by warm boiling in milk, and the bubbles next to it are white asparagus puree and fermented turnips, which points out the roundness of fermentation.

The most exciting thing about this dish is the "fusion of sea and land"-fresh geoduck provides the sweetness and crispness of the ocean. The oily meat flavor of the foreleg of Spanish Iberian ham complements the sweetness of asparagus. The bottom is salted whey and yellow mustard seeds fermented and pickled as the seasoning base, and finally with vanilla and citrus notes.Garnish with sprouts.

The peaceful coexistence of sea, land, and vegetables on a plate is the most natural embodiment of this season's theme.

Bread-a formal dish that should not be skipped

MO's bread is worth discussing separately. In addition to the general flour, the main body also adds the classic corn flour from northern Italy to achieve the texture of the outer coke and the inner bomb. The most special thing is that rosemary exudes a ginger-like aroma after heating, which brings an unexpected olfactory twist.

The matching sauce is duck liver cream, which is cooked in moscato. There is no fishy smell, only a faint fruity wine flavor, which fits well with the ginger flavor of the bread. The service staff recommends eating half of it first, leaving the other half to match the follow-up sauce. This arrangement is quite considerate, and it also allows the bread to play a role beyond "filling" in the whole meal.

Little Pig in the mountains-Taiwan's best pig debut

Good pig

The meat part of the fan is made of Taiwanese pigs, and it is paired with the traditional poultry sauce "cacciatore bianco" (cacciatore bianco) in central Italy. The sauce has the acidity of tomato and the mellow stock.

The chef specially added the second layer of pork meat to blend the gum into the sauce to make it more oily and fragrant. The bottom layer of the side dish is sweet fennel, with an octagonal flavor; in the middle are red algae, green seaweed and sea grapes, which bring a faint salty feeling of the ocean; the uppermost large-leafed green garlic provides slightly sourness and tightens the sweetness of pork.

There is no doubt about the quality of the pig itself, and the maturity is accurately mastered, and it is unforgettable after eating.

Black squid and artichokes

This "transition appetizer" features squid and artichokes as the main characters. The purpose is to clear the mouth, but the execution is not sloppy at all.

The edible part of the artichoke is diced, and the leaves and stems are made into a sauce to provide herbal bitterness; the squid is soft and has a visceral aroma; the Japanese golden dates next to it are sour; the brown sauce composed of dried squid and artichokes is fresh; the top egg yolk hollandaise is incorporated into the stir-fried dried spinach, which exudes a similar fragrance.The aroma of roasted tea is like a thin barrier, covering the whole dish.

Artichoke has never been my favorite ingredient, but this time, its taste is the same as fresh bamboo shoots, which made me re-recognize the possibility of this ingredient.

Memories of the South-Calf thymus, a double tribute to the terroir of southern Italy

Calf thymus gland

The calf thymus gland (sweetbread) is the best demonstration of the chef's delicate skills.

The texture of the center is similar to Baizi, soft and smooth, and the outer skin is made of wheat, which presents a crisp feeling similar to frying during the oiling process, allowing the same ingredient to provide two distinct flavors at the same time. Sprouts and watercress provide herbs and piquancy; another green sauce is made of watercress with a more pronounced sour taste; the white turnip sauce at the bottom serves as a softening background color.

The name "Memory of the South" refers to two flavors of southern Italy: almond sauce under the thymus gland, and a brown sauce made of licorice wine and coffee. These two scents are put together, with a nostalgic and ambiguous aroma, like the feeling of walking on the southern coast in summer.

Hamburg

If you go to MO without adding this burger, you will regret it.

Australian pure-blooded wagyu shellfish and Joselito Iberian pig meat are both hamburger meat. The top is extremely fat duck liver. The hamburger bread uses brioche. The skin is thin and crispy, and the inside is as moist as roasted butter.

The overall richness has reached a state where there is no need to explain at all. As long as you take a bite, you will know why it is worth the extra money, the waiting, and the aftertaste afterwards. This was the most satisfying moment of the night.

The gathering of beans-the stage for Italian Pasta to play

Three kinds of beans

The oversized spiral noodles are designed to fully absorb the sauce and are paired with three kinds of beans: fresh broad beans with rice and milk flavor, sweet peas to make the bottom green sauce, and white waist beans to add a second sauce made of quail meat, white waist beans and mint-you can also eat fresh mint leaves and herbsThe coolness is interspersed between the full meat flavor and the sweetness of beans.

Finally, the goat milk cheese is shaved, and the whole dish is chewy, sweet and full.

To achieve this level of Italian pasta is to truly respect this traditional form.

Tenderness in the forest-Venison main Course

Venison

Half-cooked venison with carrot sauce, wildness and delicacy coexist in the same plate.

The seasoning of the venison itself makes the game taste less rough, while retaining its due personality, which is difficult to do in most restaurants. The quietness of this dish, on the contrary, makes it leave space in the sumptuous menu.

The green herbal sauce, shale, Bassamik vinegar, and the beautifully distributed rib eyes with oily flowers are a must for both vision and taste to be satisfied at the same time.

Dessert before

Calabria is a coastal region in southern Italy, known for grapefruit, lemon and olive oil.

This appetizer is made of yellow lemon to make a pudding texture at the bottom. The outer layer resembles a meringue sphere with grapefruit pulp, and the bottom is paired with olive oil with a nutty aroma. The overall freshness and brightness are the most appropriate ventilation after the main course.

Sweet and sour trio

The last formal dessert ends with a sweet, sour and salty trio. Cherries, pistachios and salted cherry blossoms are used to form the cake filling and ice cream. The cherry ice cream next to it also adds dried cherries to enrich the level. This dessert makes the end of the meal not a sweet and greasy satisfaction, but a sober and conscious memory freeze.

Petit Four-Warm Conclusion

Three finishing snacks: 72% chocolate biscuit rolls, which are still warm when served; round macaroons; and classic Italian snacks made from dried figs soaked in rum.

The last bite is a gentle farewell to rum and figs.

Final Thoughts

A meal that makes Tainan people proud

Ristorante MO doesn't need the aura of a Michelin star to convince you, but if you ask me, its level is definitely worthy of any level of affirmation. The chef's creativity is not for show off skills, but for meaning: behind every combination of ingredients, there is clear logic and sincere emotions. Delicate, balanced, thoughtful-these three words, used on MO, are not superfluous.

The only pity is that the wine list is not arranged this time, and the experience of one dimension is missing. But after the meal, this became the reason I wanted to visit again the most: I look forward to one day, I can walk this small stone road again with a complete wine pairing.
