Before coming to Kanazawa, I saw many people recommend this yakiniku shop "Butcher Jade", which specializes in Noto beef. I thought that since I have come to Ishikawa Prefecture, I should naturally try the local representative wagyu beef. After actually eating, it can only be said that there is a big gap between expectation and reality. It is a shop that I don't recommend very much.

Let's start with the conclusion:
The overall performance is generally low, and it is not worth making special arrangements.

Butcher Jade Menu introduction and Dining experience

🍖 Order this time| Butcher Set Meal (12 items)

Price: 6,600 yen per person

The package contents are as follows:
• Cheers drinks
• Salad of the day
• Three appetizers
• US beef tongue
• Two types of rare parts of Noto beef
• Two specially selected Noto cattle
• White rice from Ishikawa Prefecture
• Yuzen Ware
• Noto Pig Five Flowers
• Two kinds of domestic internal organs
• Homemade soup
• Dessert today

Judging from the number of items, it is not small, but from actual experience, the quality and completion have not supported the expectations of the "Noto Beef specialty Store".

Fleshy performance

To be honest, the biggest problem with this meal is "the meat itself."

Noto beef is theoretically a local brand of wagyu beef, but it actually tastes: the oil is not delicate enough, the taste is tough, the aroma is insufficient, and there is no sweetness that melts in the mouth or grease.

As a whole, people can't help but think: I've come to Japan, why don't I just eat black-haired wagyu beef?

Even if the package also includes beef from other sources and Noto pigs, the overall performance falls in the range of ordinary and no memory points.

Dining method

This is a do-it-yourself grilled meat type, not a substitute roast at the table.

For the case where the meat quality itself is not outstanding, self-grilling is easier to amplify the shortcomings. If the heat is slightly careless, it is easy to dry out, and there is less peace of mind for the staff to help you check it.

Special Cuisine|Yuzen-yaki

The only thing that is more memorable in the package is this Yuzen-yaki.

The practice is to eat meat slices with protein. It is quite special visually and conceptually, and it is indeed rare.
But as far as the actual taste is concerned, the protein does not add too much to the meat, but is slightly superfluous.

Side dishes and other side dishes

The whole is too ordinary, there are no particularly prominent highlights

Personal feelings

"To be honest, if you haven't eaten too much delicious roast meat, you might think it's okay; but once you have eaten really good wagyu beef, you will think it's very ordinary here.

In Japan, a place where the level of grilled meat is already extremely high, at a price of 6,600 yen, there are actually many options.
In contrast, Jade, the butcher, has a low degree of completion and cost performance.

But if you want to eat good meat, pursue flavor levels or roast meat techniques,,
Then this one can really be skipped.

關於我

Choosy Chou

Hi, this is Chou Chou. Because I have always been "picky" about good things, I founded Choosy Chou to record and share the food, flavors and travel experiences that are truly worthy of being remembered. I am a food and flavor explorer, from street food to Michelin restaurants, from hidden bars to boutique cafes, I like to use my professional senses to taste, understand and compare, rather than just taking pictures and checking in. I have WSET Wine Level 2, WSET Sake Level 1, SSI Sake Navigator, and Coffee CSP Sensory Skill Foundation licenses. I hope to use a more systematic way to show you the flavor value behind a glass of wine and a dish. I have traveled to many countries such as the United States, Japan, South Korea, Iceland, and the United Kingdom. I believe that the most authentic language in the world is hidden on the table and in the cup. Choosy is not picky, but an insistence on the quality of life. You are welcome to join me in savoring the world with higher standards.
